Unable to curb my impulsive acquisitions, I have branched out into a IDF Centurion (the 'Valley of tears' series gets part of the blame)

Any good resources (pref online) on the Golan theatre?

I imagine that the Manasherob books are the premier reference source.  There are a couple of IDF specific SIGs on Facebook.  The IDF Modelling site is very useful but it's all members only and joining remains difficult.

Anybody know what the rectangular boxes either side of the drivers hatch are?

I *think* some sort of junction box, as some have a wire coming out and the other end being closed by some kind of cap.

the turret has them too, front and back of the loaders hatch.

They are part of the Centurion itself, not part of any IDF re-working.  They appear in photos and drawings but are never identified.  The official stowage diagrams don't mention them.  I would hazard a guess that they are external power outlets, possibly for a spotlight or inspection light etc.  I might be able to get you a better answer later in the week.  Might........

They are for locking open the hatches to stop them smashing you on the head
