Well, that's scale modelling!!!

I guess the problem with another sheet of the same that you have is that the artwork will be the same and not reversed for the other side. There's a FCM set and I used the Furball set, which were lovely. But yes with just one piece of nose art it would only be partially completed.

I know what you mean about the hobby though... My current project will need a mix of transfers from two aircraft and some others that will have to be made; the only transfers for the specific aircraft being impossible to get hold of and only then only in 1/48 that's of no use to my 1/72 project.
