I'm pretty sure that there's a highly-detailed 3D printed kit out there somewhere.
This one, perchance?

F-104G not sure if Belgium or Dutch with a B61
Yup. And B43 / B47 before that, like Rob said.
There are some good reference pictures of all three types on p.160 of the DACO book on the '104.

Tape it tightly to a piece of wood and gently dip it in hot but not boiling water..?

You could use it in a Thunderjet.

Personally Hasegawa, with Fujimi a distant second
For a Gentlemen's Scale thin winged Phantom,, AFAIK your choices are Hasegawa, Fujimi, the ancient Revell and the equally ancient Airfix.
Personally, I would not bother with the Airfix and Revell, so that leaves just the Japanese kits.

Thank you Andre, for some reason I thought Hasegawa only had an old tooling of the Phantom from the 60s, but looking again I see it's 1990 vintage. Definitely will try to find one!
You're welcome. I'd try and find this boxing which has a rather gorgeous Cartograf decal sheet.

Just don't make Luigi get involved. Trust me on dis, you don't want Luigi to get involved.
Well, it's either that or the Piranha brothers. You don't want Dougs sarcasm.

Hasegawa, for my money (at least until FineMolds gets around to the B), with the Fujimi kit a close second.

As for most beautiful, one I haven't seen mentioned yet is the F4D Skyray.

This is what comes of mixing your drinks! Must try harder.
You must try harder mixing your drinks?
These shots suggest a light colour:

A bit down on this page is a cockpit photo of a restored one - no clue as to its accuracy:

The main cockpit colour would be FS36231 Dark Gull Gray:

As for your next question - it varied, which specific camouflage scheme are you going to depict? F-104J's carred several different finishes.

Fit so far has been exemplary apart from the forward nose intake whcih gave me some major gappage - most likely selfinflicted. I needed a fair bit of putty:
Which cleaned up allright - here she is as of now!

Some progress! - I painted the homemade tub and Green Stuff instrument panel Dark Gull Gray, followed by some panel line wash to bring out the details - I also put together and painted a spare SH seat and added a control stick from the spares cabinet:
Not 100 %accurate, but at least it's better than the cavernous void and very basic seat of the stock kit!

The first set Armando posted would be appropiate for a B. There's this FineMolds set as well.
