sometimes you can go for faster performance etc but things get sacraficed in other areas
the main thing to look out for is buying aftermarket cards that are advertised as genuine off ebay etc ..as they can be very poor quality ..
also i have several genuine fuji cards that have come from ( if you read the fine stamping ) manufacturers such as toshiba , sony , etc ..
the main advice i give is if you spend 100's maybe more on a good quality camera do not skimp on accesories

You might find 8gb is more than you will ever need
this is sterling advice i use a 256mb in my 8mp fuji and whilst out shooting will delete till i only take home what i want to
1mb would give me a day without deleting
8 mb would probably do a holiday with carefull and selective editing

You need relatively large cards as you should be shooting in RAW, one of the big advantages of a DSLR. The 10 meg sensor, and I'm guessing here is going to give you about 400 shots on an 8Gb card.
Sandisk have a very good reputation and are the manufacturer. Just be aware as PHREAK has pointed out before, fakes are abundant. There are a few quick checks that can be done to get an indication of the cards authenticity.
The Extreme III card is fast and can make use of UDMA, as can the EOS1000 I believe, so it's worth going for a fast card, rather than a cheapo alternative.
If I had to chose anything other than Sandisk it would be Lexar.
Mainly though just enjoy what you have.

8Gb is probably more than enough. I tend to stick to 4Gb cards, just in case one goes down, I haven't then lost everything.
