I believe gray colour most of Ju 52-3m were painted with is actually anodized aluminum. Photo of the Do 17 V2 cockpit was published in the old TBU booklet and somebody also put it on the web: My guess about the colours would be medium gray dashboard with black instruments, black and white control wheels and cockpit walls in natural aluminum.
