CA or even soldering where you need structural strength, but you can use PVA in the shape of Gator's Grip, or similar, and even gloss varnish to hold things down like instrument panels, and such like that won't be subject to any stresses during or after the build.  This would be better off in the Tips & Tricks section though, so I'll move it there :)

MicroScale's Micro Metal Foil Adhesive also works well on flat surfaces.

For multilayered flat PE parts (like cockpit instrument panels) you can use 3M's double-sided clear tape.

CA is a good solution if there's no need to adjust placement of parts or the strong join is needed.

For maximal structural strength I suggest soldering.

Special PVA glue like Gator's Frip gives you slowly curing contact that will stay relatively flexible when cured.
