Hi im building the cockpit of a mk2 spitfire in 1 48 scale, im finding the cockpit parts a little fiddly while painting.   I can't use both hands, i had thought of using blue tac to hold parts while i paint, but do i put the blue tac away when i've finished modeling or can i leave it out on my bench?

I treat mine like chewing gum and leave it as a "blob" stuck under the bench.

As above, it can stay out. Rolling it around before next use will warm and soften it again for next use.

Or. You could try painting tricky to hold parts on the sprue. Cut the trees up but leave the parts attached allowing you (a) easy access to the bits you want to paint and (b) convenient bits of sprue to use as 'handles'...
