Hi Ian
Firstly, welcome to the world of string and fabric ! The Fokker D.VII is a good place to start, not only does it have no real bracing wires , its a single bay biplane so no need to worry about
endless struts to line up !
As for kits, go for the Eduard version, the non-weekend versions are complete in every sense of the word, lots of detail , lots of etch and lots of lozenge decal to complete the master piece.
Its not a hard kit to build. This is not meant to sound like Roden bashing (i am a massive fan of them) but the eduard kit has greater detail, goes together easier, and has some quality decals.
hope that helps !
